Calamari Recipes: Two Delicious Seafood Pasta Recipes

These two calamari recipes were given to me by Ileana. She is an accomplished cook, an expert of traditional Le Marche recipes and a refined gourmet, as you can appreciate in her picture below. The seafood pasta recipes she gave me, are easy, delicious and make a meal on their own.





Noodles with Calamari, Shrimps and Artichokes

calmari recipes For 4 people you’ll need:

450 gr. (1 pound) of noodles like TAGLIATELLE

300 gr. (11 ounces) of cleaned CALAMARI

300 gr. (11 ounces) of cleaned SHRIMPS

1 ONION

3 ARTICHOKES

1 cup of vegetable BROTH

1 glass of WHITE WINE

3 spoons of OLIVE OIL

1/2 cup of liquid CREAM

SALT

PEPPER

Cut the onion and the calamari in thin slices and cook them in a deep skillet on medium fire with the oil, the onion and half a glass of wine. Just before the wine is completely evaporated and the calamari are ready, add the shrimps.

Clean the artichokes, discarding all the hard leaves and slice them in small pieces. Cook them on a low flame with half a glass of wine, a cup of broth, salt and pepper. When the artichokes are tender, make a thick sauce of them with a blender.

Cook the tagliatelle al dente, drain and add them to the skillet with the calamari. Add the artichoke sauce, the cream, a little fresh pepper and toss over medium heat until the noodles are well coated with the sauce. Serve immediately.

Maccheroni and Calamari Recipe

For 4 people:

450 gr. (1 pound) of short pasta like MACCHERONI

800 gr. (29 ounces) of cleaned and sliced CALAMARI

1 ONION cut in small pieces

1 CLOVE

1 can of TOMATOES

MARJORAM

PEPPER

CHILE PEPPER

OLIVE OIL

SALT

In a deep pan lightly fry on medium fire the onion and the calamari with a pinch of marjoram, the clove, a little chile pepper, salt and pepper.

When the water is evaporated, add the tomatoes and let simmer until the calamari are tender. If needed add a little water.

Cook the maccheroni for half the cooking time then drain them gently but hold some of the cooking water and keep it hot on a fire. Pour the maccheroni in the pan with the calamari sauce and let cook until the pasta is ready. If it gets too dry, add a little cooking water from the pasta. Serve hot.
