Cheap Dinner Recipes: Pasta, Sausage and Zucchini

For easy and cheap dinner recipes you can combine pasta with seasonal ingredients for a complete, satisfying meal.

This recipe is a great way for cooking Italian sausage, use zucchini when they are in season and prepare with one dish an easy family dinner.

Ingredients:

2 sweet Italian fresh sausages

3 medium size zucchini

olive oil

1 onion

grated parmesan cheese

400 gr. (14 ounces) of short pasta like penne

In a large pot bring to a boil about 5 l. (5 quarts) of water with 3 tablespoons of salt.

Slice the onion and cook it in a large skillet with a little olive oil. Add the skinless sausages and with a wooden spoon break them while they are cooking.

Cut the zucchini in small pieces and add them to the sausages, let cook on medium fire until the zucchini are golden brown. Add salt and pepper.

Drop the penne in the boiling water until al dente, about 9 minutes.

Drain the pasta and toss into the skillet with the sausage and zucchini. Mix and serve immediately with grated Parmesan cheese.
