Easy Italian Recipes from Le Marche: Passatelli in Brodo


Passatelli with broth is the best choice among the easy Italian recipes to warm up the first chilly Autumn evenings.


Ingredients for four people:

250 gr. (about a cup) of bread crumbs

100 gr. (half a cup) of grated parmesan cheese

2 eggs

one spoon of flour

nutmeg, salt, pepper

light chicken or vegetable broth

Mix in a bowl the bread crumbs with the parmesan cheese, salt, pepper and nutmeg, then add the eggs and the flour. The mix now will have the consistence of a firm paste. Adjust the seasoning and consistence: if is too liquid, add a spoon of bread crumbs, if too firm, add another egg yolk.

Put the paste in a large plate and press it with a potato masher, you’ll obtain little curls out of the mix. Immediately cook them in the boiling broth. Thanks to the cheese and the eggs they will keep an almost solid consistence.
