Easy Italian Dessert Recipes: Castagnaccio - Chestnut Cake

The castagnaccio is one of the best easy Italian dessert recipes. This sweet is made with chestnut flour and it's a gluten free cake recipe.



Ingredients:

250 gr. of chestnut flour

1 cup of milk

a handful of pine nuts

a handful of raisins

a pinch of salt

olive oil




This cake is a common food in Italy in the autumn, when the chestnut flour becomes available.

This kind of flour was widely used on the mountains when the wheat flour was too expensive or unobtainable. Chestnuts are already sweet, so you won’t need to add any sugar to this cake.

Warm the oven to 200 centigrade and soak the raisins in a cup of warm water.

Mix the flour, the milk and a pinch of salt with an hand mixer until it gets a smooth, creamy consistence.

Pour abundant olive oil in a wide ovenproof dish or saucepan.

Pour the milk and flour mix, in a thin layer.

Drain the raisins and spread them on the top of the cake with the pine nuts. Very gently press them in the cake with a spoon.

Let cook for about 45 min.

Enjoy with young red wine.
