Easy Pasta Recipes: Maccheroncini with Tomato Sauce

Generally when we speak about maccheroni we think about a short pasta, in the shape of ribbed, two inches long little tubes.

Against any expectation, the Maccheroncini di Campofilone have the shape of very thin spaghetti, a sort of angel hair pasta.

Maccheroncini are made with love and care in Campofilone, a village located in the heart of Le Marche region.

This pasta is made with premium wheat flour and an amazing amount of fresh eggs, ten for each kilo of flour.

Is then worked by hand and expertly cut into the thinnest fettuccine that can humanly be achieved.

The Maccheroncini are then left to dry in special ventilated rooms.

Cut and lightly fry in olive oil an onion, a little celery and a carrot.

Add minced meat and a sausage without its casing. When brown, add half a glass of dry, white wine and let evaporate.

Simmer with a can of peeled tomatoes and a glass of water.
