Italian Chicken Recipes: Pollo alla Cacciatora
Pollo alla Cacciatora is one of the most classic Italian chicken recipes. This version from Le Marche region was given to me by my neighbor who rises and cooks her own chickens.She is adamant about the use of lard but I couldn't get from her any more detail about the cooking times. I guess she is so proficient that she can prepare this recipe with her eyes closed, a hand tied behind her back and not worry too much about timing. Pollo alla cacciatora accompanied with rice, makes of a cheap easy recipe for a delicious meal.
Ingredients: 1 chicken 1 slice of lard 1 glass of white wine olive oil rosemary leaves 3 cloves of garlic salt and pepper Clean, wash and cut the chicken in small pieces. Cook the chicken in the lard and a little olive oil. When it begins to brown add a glass of wine and one of water and let it simmer. Finely cut the rosemary leaves and the peeled cloves of garlic. Add them to the chicken. Add salt, pepper and let simmer on a gentle fire stirring every now and then until the liquid is evaporated.
