Italian Sausage Recipes

With these two simple Italian sausage recipes you’ll be able to enjoy one of the most popular foods in Italy.

The pork products helped the survival of the family during the cold winter month and they were used judiciously in many cheap dinner recipes.




Risotto con Salsicce (Rice and Sausages)

1 onion

1 cup of rice of the short grain variety like Carnaroli

2 cups of chicken stock

grated parmesan cheese

olive oil

salt, pepper

Slice an onion and cook it in a little olive oil.

Add one sausage without skin and let it brown while you break it in little pieces. Add one cup of rice and stir it with the oil and sausage. Pour the chicken stock and let it simmer covered for about twenty minutes. If the rice gets dry before being cooked, add a little water or stock.

Add the Parmisan, mix and then let rest for few minutes before serving.

Polenta e Salsicce

1 carrot

1 onion

1/2 celery stalk

1 sausage per person

1 cup of tomato sauce for every 3 sausages

375 gr. of polenta flour

Heat the oil in a big saucepan, add the carrot, onion and celery thinly sliced.

Add the sausages, each cut into two or three pieces.

Let cook for few minutes and then add the tomato sauce. Adjust the salt, pepper and let simmer for about forty minutes.

Meanwhile prepare the polenta, a cornmeal porridge. If you use the precooked kind, it will be ready in few minutes. Boil 1 1/2 liters of water, add the polenta slowly while stirring with a wooden spoon. Continue stirring on low heat until thick and creamy.

Serve in the plates topped with the sauce and sausages.
