Italian Soup Recipes: Passatelli di Urbino
One of the best Italian soup recipes for passatelli is the classic version from the historic town of Urbino. Most of the traditional foods in Italy have cheap healthy recipes made with simple ingredients that are easy to find and this one is no exception. It will make a great dinner starter. Ingredients: 150 gr. ( 5.2 ouces) of lean ground beef 50 gr. (1.7 ounces) of grated Paremesan cheese 300 gr. (10 ounces) of spinach3 eggs 50 gr. bread crumbs salt, pepper, nutmeg Chicken broth
Clean and wash the spinach. Boil them in little water then drain them, squeeze the water out and cut them finely. Mix in a bowl the meat, the cheese, the spinach, the bread crumbs, salt pepper and a little grated nutmeg until the texture is smooth and firm. With a potato masher work the mixture on a plate to obtain little green curls. Cook them for few minutes in the boiling broth. Serve hot.
