Italian Appetizer Recipes: Pizza al Formaggio (cheese pizza)

The author of this masterpiece among Italian appetizer recipes is Susanna, she lives close to us and her hospitality is legendary. We recently visited her house: while we where sacking her pantry and tasting her pizza al formaggio, she was patient enough to give us this recipe. I guess this dish is called pizza for the local habit of calling pizza everything that comes out of an oven, actually it has very little to do with the usual flat pizza, the final outcome will be more like a very tasty round bread. Ingredients: 500 gr. of white flour 80 gr. of yeast 100 gr. of grated parmesan cheese 100 gr. of soft sheep cheese a couple of eggs olive oil salt, pepper, a pinch of grated nutmeg
Mix 100 gr. of flour with the yeast diluted in half a glass of warm water. Cover with a clean cloth and let it stand until it reaches the double of its initial volume. Knead the remaining flour with the eggs, a spoonful of olive oil, salt, abundant pepper and the nutmeg. Add the parmesan cheese and work the mixture until is homogeneous, if necessary add a little warm water to make it smoother. Place the sheep cheese cut in small pieces in the middle of dough. Put in a pan sprinkled with a little olive oil and cook in the oven for about half an hour. Let it cool, cut in small pieces and enjoy with your friends.
