Delicious Italian dinner recipes from Le Marche region for a quick and healthy gourmet dinner: Pasta with Beans.
This is a delicious recipes for a quick gourmet dinner. It’ low in fat, high in vegetable proteins and fibers and actually good for you. You can use any kind of beans (our favorite are fava beans), home cooked or canned. The pasta must be short like for example “penne” or “farfalle”, don’t try it with spaghetti or you’ll get an horrendous, unmanageable knot. Ingredients for four people: 2 slices of bacon 1 cup of cooked fava beans (chick peas, broad beans, white beans, lentils, your favorite) 1 clove of garlic 400 gr. of short pasta crushed chile pepper Fry the bacon in a wok or a large pot with a little olive oil. With a blender or a fork crush the beans and the clove of garlic. Add it to the bacon and let it warm up for few minutes. Cook the pasta “al dente”, a couple of minutes less then what is suggested on the box. For most pasta shapes 8 minutes will do. Drain it leaving a little cooking water, add it to the other ingredients and cook stirring it for a couple of minutes. Add the chile pepper. Your guilt free gourmet dinner is ready!
