Ratatouille Recipe

This ratatouille recipe is healthy and easy to prepare, a favorite recipe from Italy. The key to a perfect ratatouille is in the fresh ingredients.


For four people you’ll need:

2 medium size zucchini

1 eggplant

1 red or yellow bell pepper

2 big, ripe tomatoes

1 medium size potato

1 big onion

3 cloves of garlic

crushed chili pepper

Thoroughly wash the veggies.

Cut the eggplant in thick slices and sprinkle them with salt, let rest for 15 minutes: this procedure will get rid of the bitter juices of the eggplant. When the bitter liquid is drained, cut in cubes.

Slice the onion and brown it with the garlic in a deep pan with a little olive oil.

Open the bell peppers, dispose of the seeds, cut the peppers in slices.

Peel the potato, cut off the top and the bottom of the zucchini and divide everything in medium size cubes. Add the potato, zucchini and eggplant to the pan. Let cook gently for fifteen minutes, add salt and crushed chili pepper. If it gets too dry an starts sticking to the pan, add a glass of water

Finely slice the tomatoes and add them to the pot. Let simmer for fifteen more minutes. Adjust the salt. Let rest for ten minutes.

The ratatouille can be served hot or cold, both ways is a delicious and refreshing Italian cooking recipe.
