Seafood Pasta Recipes

Three of the easy and delicious seafood pasta recipes of our region.

We had dinner at our home with Davide, another expatriate from Le Marche.

While talking about the food of our region, he told us about his passion for seafood.

With a little insistence from my part, he finally accepted to give us this simple pasta recipe and have his picture taken to be published with the recipe but he was adamant about naming the author of the recipe, Mamma Pina.

So, this is Mamma Pina’s easy pasta recipe with seafood.


Spaghetti with Oysters

seafood pasta recipes For 4 people you’ll need:

500 gr. (1 pound) SPAGHETTI

24 OYSTERS

500 gr. (1 pound) CHERRY TOMATOES

WILD FENNEL LEAVES

2 cloves of GARLIC

a little OLIVE OIL

1/2 glass of DRY WHITE WINE

Over a bowl, open the oysters and remove them from their shell.

Filter the water from the oysters and keep half a glass of it to use later.

While preparing the spaghetti al dente, put all the other ingredients, including the oyster water in a deep pan or a wok.

Cover and cook on high heat for 15 min.

Drain the spaghetti and pour them in the pan with the other ingredients. Stir them carefully on high heat to coat the pasta. Serve immediately.



Salmon and Shrimp Pasta Recipes

More seafood pasta recipes? Here are two shrimp pasta recipes: the first is with asparagus and the second is al cartoccio, a typical baked pasta recipe.

Penne with Shrimp and Asparagus

For 4 people you’ll need:

400 gr. (14 ounces) PENNE

100 gr. (4 ounces) peeled SHRIMP

1 clove of garlic

100 gr. (4 ounces) medium ASPARAGUS spears

4 tablespoons TOMATO SAUCE

4 tablespoons COOKING CREAM

1/2 glass WHITE WINE

Extra virgin OLIVE OIL

Cut off the bottom of the asparagus, wash them and cook them in boiling water for few minutes. Let the asparagus cool and cut them in small pieces.

In a deep skillet cook the shrimps and the garlic with a little olive oil. Remove the garlic, add the wine and let evaporate over medium heat. Add the asparagus and mix with a wooden spoon.

Mix the tomato sauce with the cream, add to the other ingredients and let cook for few minutes.

Cook the penne, drain, add to the skillet and mix with the wooden spoon.

Baked Pasta Recipe: Penne with Shrimps

Another seafood pasta recipe prepared al cartoccio, an unusual way to prepare pasta that allows to keep all the seafood flavor.

Serves 4

400 gr. (14 ounces) PENNE


400 gr. peeled SHRIMPS

150 gr. (6 ounces) sweet PEAS

1 onion

1 glass white wine

Extra virgin OLIVE OIL

Cook the shrimps in a deep pan with a little olive oil and the onion finely chopped, add the wine and let evaporate.

Add the peas, salt, pepper and let cook on low fire, if necessary add a little more wine.

Cook the pasta well al dente and drain, mix it in the pan with the other ingredients and pour it on aluminum foil placed in an oven safe dish and close the foil.

Place the dish in the preheated oven at moderate heat for ten minutes. Serve at the table opening the steaming cartoccio of aluminum.

Salmon Pasta Recipe

To close this page about fish and seafood pasta recipes, here is a delicious and quick pasta recipe with salmon, penne, walnuts and cognac.

Serves 4:

1 pound (450 gr.) of PENNE


7 ounces (200 gr.) of SMOKED SALMON

3 1/2 ounces of peeled WALNUTS

1 ONION


1 EGG

1 tablespoon COGNAC

extra virgin OLIVE OIL

BLACK PEPPER

Cut the onion and fry it in a skillet with a little olive oil and the walnuts in small pieces. Add the cognac and let evaporate.

Add the salmon cut in thin stripes and some freshly ground black pepper. Let cook for few minutes while mixing with a wooden spoon, cover and let rest.

In a big bowl beat the egg.

Cook the penne al dente, drain then and pour them in the bowl. Mix with the wooden spoon. Add the other ingredients, mix and serve immediately.
